Nedalny Vostok has adopted all the restaurant world’s latest trends, incorporating everything fashionable and popular from the most famous restaurants of Europe, the U.S., Asia and Australia.
Nedalny Vostok is the first restaurant in Moscow with an interior designed from A to Z by the Japanese architectural and design bureau Superpotato, whose portfolio includes the renowned London restaurants Zuma and Roka. Everything in Nedalny Vostok’s interior is made from natural materials. Familiar and identifiable by both sight and touch, they combine to form an unconventional space shaped by Japanese practicality that is both intimate and stylish.
The restaurant’s open kitchen was specially built a step down from the dining room so that guests stand on the same level as the cooks and can observe them at work. Arranged on ice in front of the kitchen are oysters and mussels, clams and lobsters, and, of course, fingers of Kamchatka crab meat. Live crabs occupy a large aquarium.
The kitchen serves pan-Asian food, uniting the different cuisines of the Asian continent. Kamchatka crab, caught in the waters around Sakhalin, plays an important role on the menu. It is prepared in a wok and served with various sauces, included in salads, cold and hot appetizers, rolls, and soups.
Another section of the menu deserving attention is that devoted to kasha—buckwheat groats with a leg of duck and the wheat variety with Chilean sea bass.
One of Nedalny Vostok’s unique traits is its loaded kitchen, which features four different master chefs: executive chef Glen Ballis, head chef of traditional cuisine Andrei Rostov, head chef of Malaysian cuisine Mamu, and pastry chef Kobayashi Katsuhiko.
