Concept
Yolki-Palki is currently the best-known and largest completely Russian-owned and -run chain of restaurants. Actually, that’s not true—it’s the largest non-fast-food chain. The reasons for the concept’s success are obvious—modest prices, uncomplicated food, conveniently located restaurants. What’s surprising is the chain’s format. Each Yolki-Palki is a fully functioning restaurant, with the entire range of services typical of a restaurant. Waiters serve guests, the menu undergoes changes, including seasonal ones, and different locations even have different offerings. At certain locations, the base menu is supplemented by pizza, or, in addition to the typical appetizer bar, there may also be an entrée bar. So each location is a separate entity, with its own distinguishing characteristics. On the whole, it is a high-tech chain concept, and an ideal business project.

The foundation of each location, however—each location’s centerpiece—is the same: the appetizer bar.

The concept is borrowed from the restaurant Tsar’s Hunt, which introduced the feature in the mid-90s. Now, of course, an open buffet with a selection of dishes that reflects an establishment’s main culinary theme is no rarity.

But at Yolki-Palki, both the bar’s connection to the restaurant’s cuisine and its selection of dishes are particularly strong.

Yolki-Palki adopted a Russian theme—the potential of which many restaurateurs have only recently been discovering—long ago and without reservations. But that isn’t the point, really; the point is the appetizer bar as an idea: a symbol of the richness of the Russian table. On that table are Caucasian, Jewish, Ukrainian, and who knows what all other foods, because on that Russian table, diverse traditions and dispositions have long mingled. Because it’s useless trying to ascertain the origin of grated cheese with garlic and mayonnaise, or that of pickled ramsons.

Even the tomato, if you consider the entire course of history, came to Russia rather recently.

Just try to imagine even the most slapdash dinner without it! It has everything that has ever been introduced or imported here. The Russian table is just that—a wealth of appetizing dishes; a diversity of small treats. And not only small, and not only to whet the appetite.

What, after all, would Russians do without shish kebab?

Are there grounds for arguing that shish kebab is not a Russian dish? No way! There’s also the issue of borscht. Is it worth starting up again? Yolki-Palki’s concept and assortment of dishes fit in any part of Russia, a country that is, as is well-known, magnificent and extremely diverse. And food unites it. Not even food itself but the connections and that atmosphere that make the foods popular. The system of unlimited trips to the snack bar is one with the idea of the open, bountiful feast table. And the intentionally tavern-like atmosphere of the chain’s locations—with cast-iron irons, pitchforks, and sunflowers, and waitresses in faux Russian folk dress—only serves to underscore the restaurant’s egalitarianism.

The proof is in the numbers: There are currently more than 30 Yolki-Palki locations in Moscow.

And we aren’t finished yet. Because, in the end, there should be a place in the world where, without delays or glares, you can drink six cups of tea in peace! And the more of them there are, the better.
